Officially, Good Friday, Easter Sunday & to a lesser extent, Easter Monday, are public holidays in Australia. Saturday is kind of optional & most shops, cafés etc are open on the Monday, though not banks & most 'offices'. Having worked in retail sales for far too long, I became used to pretty much only having Good Friday off & having to work the others... This year is the first time I can remember having 3 of the 4 days off

That said, I had to find fresh soy milk for a recipe on Easter Sunday 2 days ago & no supermarkets were open - only smaller Asian markets & the petrol stations - none of whom carried fresh stuff, only the long-life cartons (blecchh!). It took me an hour of driving around the Northern Beaches area of Sydney to finally find a small place that had fresh soy milk in the fridge. So - some years there are less shops open than others...
